El Peiró

The essences of a unique terroir | 0.5L

This oil is exclusively sourced from a high-altitude farm in Cabacés, a traditional oil-growing area in Priorat. Our Master Miller chose this plantation because of its very specific climate and orography (terraces). This essence imbues the plant with an identity that is transferred to the oil and attributes that are unique to the palate. The El Peiró Arbequina is the heart and soul of this territory.

A special oil, which is a joy for the senses.

TASTING NOTE

An oil with very low acidity, which is balanced and complex. Green olive fruitiness, with very harmonised spiciness and bitterness. The aftertaste increases the intensity of the fruitiness, thus enhancing its freshness.

Distinct aromas of apple, banana, tomato and artichoke.

On the palate, it is smooth, fruity and slightly nutty.

An extra virgin olive oil with special harmony between spiciness and astringency, dominated by the characteristic sweetness of Arbequina-variety oils.

Elaboration

Chemical analysis

This EVOO is produced at the end of October when most of the olives have not yet fully ripened. The olives are harvested by hand and taken directly to the mill. Cold extraction is carried out at a temperature below 28 degrees with short malaxation to preserve all the aromas of the fruit.
After natural settlement lasting about 5-6 days, the oil is filtered and bottled.

Estate oil El Peiró and it's pairings

This oil is very versatile and is excellent with fish, white or red meat dishes and vegetables. It also goes perfectly with cold cream soups, fruit or vegetable salads and pasta of any kind.

Bread with tomato will bring out all its fruity characteristics.

The variety’s banana and nut flavours combine beautifully with bitter chocolate.
