Flor d'oli

A limited edition, made using the first harvest of Arbequina-variety olives. Presented in its most primal, natural state, this pure olive juice has been minimally processed.

The flowers of the olive tree bloom between April and June. They take the form of small bunches with between 10 and over 30 white and yellow flowers. Once fertilised, the petals on these bunches fall off and new olive seeds begin to form. Hence the name of our oil: Flor d’oli (olive flower).

This is an unfiltered extra virgin olive oil. Because of its state and the volatile matter comprising it, it may produce precipitates. These precipitates, in the short term, should not affect the oil’s quality.

TASTING NOTE

An oil dominated by the primary aromas of Arbequina olives picked on the first days of harvesting.

It has a distinctly fruity taste of unripened Arbequina olives, identifiable on the nose and palate, with a large array of plant aromas, including green grass, green tomato, green almond, artichoke, kiwi and banana peel.

 

On the palate, it has a green almond flavour, with prominent bitter and spicy hints and a slightly astringent finish.

Once harvested, the olives are taken to the oil mill as quickly as possible and crushed.

We begin by cleaning the fruit and then grind it. With this we obtain a paste which we beat and spin for short periods at a low temperature that never exceeds 28 degrees.

The process gives us a high-quality extra virgin olive oil.

Oil obtained from the first olives, mostly green, and packaged without filtering, a characteristic that gives it greater expression and bitterness, all these aspects make it perfect for consumption raw, perfectly accompanying salads or bread, but also ideal for finishing dishes such as for example white fish, or sautéed or braised vegetables.
