Santa Creu

The essences of a unique terroir | 0.5L

This oil pays tribute to the 11th-century Romanesque chapel Santa Creu de Creixà, located in the municipality of Piera. Surrounding the chapel, we can find the centennial olive trees that supply the olives exclusively used to produce this excellent oil. This is an area very much influenced by the Mediterranean, with dry, hot summers and cold, damp winters. The soil where these olive trees grow is clay loam and poor in organic matter, and the result is this magnificent oil.

In this unique location, we can also find hectares of forests full of flora and fauna and a large number of sustainable vineyards. The olives used in our Santa Creu oil are hand-picked.

TASTING NOTE

Complex in profile, this oil has low acidity and a green fruit aroma.

On tasting, we can detect everything from plant aromas, such as freshly-cut grass and artichoke, to green fruit aromas, such as apple, green banana or green tomato.

On the palate, its flavour is powerful, with a distinct bitterness and spiciness leading into a slightly sweet finish.

This is a complex EVOO, with a large array of aromas and a very pleasant and balanced finish.

Elaboration

Chemical analysis

About 90% of the olives harvested are green. They are picked by hand and taken direct to the mill.

Cold extraction is then carried out at a temperature below 28 degrees, with short malaxation to preserve all the aromas of the fruit.

After natural settlement lasting about 5-6 days, the oil is packaged unfiltered, keeping the character of the fruit intact.

Estate oil Santa Creu and it's pairings

This oil is excellent with dishes made with raw products, inclu- ding salads, grilled or sautéed vegetables and mushrooms. It also combines perfectly with steamed, grilled and marinated white fish and seafood.

Bread with tomato will bring out all its fruity characteristics. It is also ideal in confectionery and with chocolate desserts like coulant, brownies or dark chocolate soups.
