The first perceptions of the EVOO elaborated with Arbosana are three: fresh greenness, brilliant, different.

Of late maturation, the harvest makes to finals of December with the green olive. Of violet color in the maturation, it has a fruit of small size, spherical and slightly asymmetric.



Oil of complex profile, characteristic of the variety. It possesses a fruity character of the identifiable green olive in nose and mouth and with a big diversity of secondary vegetable aromas, especially to herb recently cut It presents nuances of other fruits and plants like the green tomato, banana, walnuts and green almonds, fennel, artichoke, and mint.

Feeling in fresh mouth and balanced in bitterness; spicy and sweet with a dulled astringency final, that identifies this oil with the green olive, fresh, and brilliant. Inset results a very balanced oil and harmonic, with one-touch marked of green fruit.
